I didn't even know it was a possibility to make flour from acorns!! I smell a new pancake reipe coming on. . .

acorn flour is pretty bland , I love pine nut flour- but it does have all the same uses.

I have actually made that before. I didnt make pancakes with it though. I made a flat bread. Didn't turn out too bad. Thanks for posting that. It is always good to read what someone else says about it.

I've heard the best tasting mix is 1/3 wheat flour, 1/3 acorn flour, and 1/3 cattail flour. Have yet to try it. I've eaten amaranth flour and mesquite flour breads. Mesquite is a bit sickly sweet if you eat too much IMO. I made ashcakes with the amaranth and it was a bit bland but not too bad.

Thanks for sharing this, I made pancakes once, but I mixed the acorn powder with some bisquick , I will try this next. I really liked the flavor of the white oak acorns.

I wonder what the nutrirional values of these different types of flour are? I am willing to bet they are healthier for you than store bought!!
